Why This Works Without Smell
A fantastic combination of texture, sweetness, spiciness and freshness, to call this quick lunch a fusion dish is probably to give it too much class, as it came about from some leftovers from a shop-bought Indian ready meal deal that had included some onion bhajis.
The oven-baked onion bhajis have a sweetness and crispiness to them, which, combined with the crunchy lettuce, soft white bread roll and whatever condiments you have to hand, immediately create an exciting variety of textures.
I combine them with some mango chutney for the sweetness, a splash of hot sauce for spiciness and a dollop of shop-bought coronation sauce for slight hint of sourness, though I have also tried this with some plain yoghurt mixed with a pinch of curry powder to roughly the same effect.
Obviously, you can also make your own onion bhajis, but given this was designed to be a quick lunch, I wouldn’t bother.
Ingredients
- 2 soft white rolls
- 1 small onion, thinly sliced
- 2 shop-bought onion bhaji
- a few leaves of crunchy lettuce
- dollop of mango chutney
- dollop of coronation sauce, or plain yoghurt mixed with a pinch of curry powder
- some of your favourite hot sauce to taste
Method
1. Cook onion bhajis
Cook the bhajis according to package directions.
2. Prepare the rolls
Slice the rolls in half. You can toast them lightly under the grill or in a toaster, but it's not essential.
3. Assemble
Spread the bottom half of each roll with coronation sauce (or yoghurt mixture). Top with the sliced onion, followed by the onion bhaji. Add the lettuce, then a generous dollop of mango chutney and a few dashes of your favourite hot sauce. Place the top half of the roll on top and serve immediately.
Tips
As with anything this informal, don't be afraid to experiment. I use coronation sauce, but you can use whatever you have to hand. I find that a mix of yoghurt and curry powder works well, but you can also use mayonnaise mixed with curry powder, or even just plain yoghurt.
A squeeze of lemon juice over the onions can add a nice hit of sourness and freshness.
